Pumpkin Chocolate Chip Waffles

Pumpkin Chocolate Chip Waffles

2 1/2 cups whole wheat flour
1/4 cup sugar
4 tsp. baking powder
2 1/4 tsp. pumpkin pie spice
1/2 tsp. sea salt

2 eggs
3/4 cup pumpkin puree
1/4 cup olive or canola oil
2 cups skim milk

1/4-1/2 cup mini chocolate chips

Combine dry ingredients.  Fold in wet ingredients.  Add chocolate chips.  Cook in waffle iron until golden brown.  Try not to eat them all as they come out of waffle iron.  Freeze leftovers after allowing them to cool completely.  Pop them in the toaster to reheat.
